14 lb piece ($10.53 per lb). Made according to established recipes in creating stravecchio, a grainy cheese like parmesan. This provolone cheese is the product of a long and slow aging process which takes a year in environmentally controlled rooms. This special aging process gives it a very unique flavor. Packaged in a brown protective wrapper, with pelure paper, it has the white Auricchio brand logo and white watermark. It is a distinctive product which commands reverence at the table. It is great with baked dishes, sauces and pizza.

A little dry, small salt crystals, and some bite. Lots of flavor and some stink in a good way. It is a good addition to pizza or a sandwich. The price is right !
