It can be served plain or grated over other dishes. Besides this pecorino romano, there are several other types of romano cheese, romano, caprino romano, and vacchino romano. As a granular cheese, romano is best bought in wheels or wedged. In this manner it would not lose its aroma and flavor. It should be grated prior to serving with other dishes
