San Marzano is a small town in Italy just outside of Naples. The tomatoes are grown in volcanic soil in the valley of Mt. Vesuvious. Only true San Marzanos, grown in the San Marzano region, have the DOP seal. San Marzano tomatoes can also be grown other places since they not only represent only a region, but a variety as well. This variety grown in other places do not have the DOP seal. San Marzano tomatoes are thinner and pointier in shape. The flesh is much thicker, and they contain fewer seeds. They are much stronger in flavor, sweeter and less acidic. This is why they are any chefs best choice for a premium tomato.
